Make fresh, natural cheese with flavors and textures that far outshine mass-produced supermarket fare! Imagine serving your own gourmet mozzarella with garden-fresh tomatoes and basil or as a pizza topping. Homemade ricotta cheese is delightful in dips and lasagna. Our DIY cheesemaking kit contains enough ingredients to make 30 batches — just add milk. Kit includes dairy thermometer, citric acid, one yard of reusable butter muslin, vegetable rennet tablets and cheese salt, plus instructions and recipes.

  • Makes 30 batches (each batch uses 1 gallon of milk)
  • Utensils needed: 1-gallon stainless steel or other non-reactive pot, colander, slotted spoon, long knife
  • Use whole milk, goat's milk, or powdered milk plus cream (don't use ultra-pasteurized milk)
  • Kit will store at room temperature up to one year. Rennet tablets will last longer if stored in a freezer
  • Once opened, store citric acid and salt in tightly sealed containers in a cool, dry place and they will last indefinitely
  • Made in the USA

          The idea of this kit was intriguing. It is not as easy as portrayed in the catalog. I had to buy a special thermometer to use with the kit. When I called your company to ask what a dairy thermometer was, I was told I could just use a candy thermometer, which is not true. A candy thermometer temperature starts at 200 degrees which is well over the temperature prescribed in the recipe

                We have made several batches now and this is foolproof. Friends don't believe me when I say "We made cheese". It is fun, easy and exciting to actually do this yourself. You can add any seasoning you like: red pepper flakes, chipotle chili powder, cracked black pepper.....we have even rolled our cheese in garlic flavored olive oil----outstanding!!!

                      My family loves cheese, especially fun to eat kinds of cheese! And when they learned it was homemade--well sweetie, just get out of the way! It was a complete hit! I've made it twice now, the first time it seemed to take me a while since I was not sure about anything but with the instruction booklet and the great pictures, I made it. The second batch went so much more smoothly. I don't know that I will ever buy mozzarella again. I am trying the ricotta next to use in my homemade lasagna. My family already thinks my lasagna is the best, hopefully using homemade ricotta in my lasagna will make me famous!! Well, famous within my family!
